Brownies a la mode

Makes 12 brownies
Prune puree:
½ cup prunes, pitted and roughly chopped
½ cup water, plus more if needed
Brownies:
2 cups unbleached all-purpose flour
1 cup unsweetened cocoa powder
1 ½ tbs baking powder
1 ½ cups Sucanat *
1/8 tsp seasalt
1 ½ tbs flaxseeds
½ cup canola oil
1 ¼ cups soy milk
1 cup maple syrup
1 tbs vanilla extract
½ cup non dairy chocolate chips (optional)
To make the prune puree:
In a small saucepan, combine the prunes and ½ cup water and simmer for 5 minutes, or until the prunes are plump and soft. Add more water as needed. In a blender, puree the prunes with their simmering liquid until smooth.
To make the brownies:
Preheat the oven to 350F * . Oil an 8x11-inch * baking pan and line it with parchment paper.
Into a large bowl, sift the flour, cocoa powder and baking powder. Add Sucanat and salt and stir until combined. In a blender, grind the flaxseeds until they resemble coarse meal, about 1 minute. Add the prune puree, oil, soymilk, maple syrup and vanilla. Puree until smooth. Pour the mixture into the dry mixture. Mix until combined, then fold in the chocolate chips and pour into the prepared pan.
Bake for 40-55 minutes, or until brownies are firm to the touch and have pulled away from the side of the pan. Cut the brownies into 12 even pieces.
Serve with raspberry sauce, chocolate sauce or frozen vanilla Rice Dream. Garnish with fresh berries and a dusting of cocoa powder.
For a lower-fat version, double the recipe for prune puree and use the second ½ cup to replace the canola oil.
The flaxseeds serve as an emulsifier.
